Lympstone Manor Hotel-Restaurant-Vineyard
Lympstone Manor is truly a gourmet destination, with acclaimed Michelin-star cuisine by Michael Caines, served in three stylish dining rooms, each with their own decor and personality and with a world-class wine cellar.
The hotel has 21 luxurious guestrooms and suites that take full advantage of the wonderful situation overlooking the Exe, and six charming additional accommodation in the form of shepherd huts situated in secluded woodland at the bottom of the Lympstone Manor vineyard. Each room and suite is named after a bird of the Estuary, while each Shepherd hut is named after the woodland animals. Each room is inspired by its namesake feature colours, textures and plumage throughout the interior design.
Michael is one of the best-known and -acclaimed chefs in the UK. He has won countless awards and regularly features on television. Michael is celebrated for his exciting, modern British cuisine that makes the best use of seasonal and local produce and ingredients from Devon and the Southwest. Lympstone Manor is the home of Michael Caines, one of the UK’s best known and loved chefs. He held two Michelin stars for 18 years and earned a Michelin star for Lympstone Manor within just months of opening. Michael’s refined, modern British cuisine makes full and creative use of the bounty of good things to eat and drink from East Devon and the South West.
Pool House Restaurant & Bar
Our more informal dining venue is based around a beautiful heated swimming pool overlooking the vineyard, with magnificent views across the Exe Estuary and beyond to Lyme Bay. The Pool House Restaurant & Bar offers informal dining and is also the venue for some of our more informal Wine Dinners. It is open to Residents, House Members, and occasionally the general public.
Wine at Lympstone Manor
Since its creation, wine has been central to the Lympstone Manor experience. The cellar now has a list of over 600 bins, including older and mature vintages.
House Membership
House Membership brings select membership to an exclusive club, allowing Members to utilise the Pool House and facilities year-round, dine in the Pool House Restaurant, or enjoy a drink in the main Lympstone Manor bar and lounge. Other benefits include Champagne on Members’ birthdays, a discount on room rates and food and beverage, as well as exclusive invitations to events such as the annual Pool Party, the Harvest Festival, Christmas Carols at the Manor and more.

Sustainable wines are more than just the production process, it is about creating sustainability at every stage of the winemaking production – from growing the grapes to adopting social responsibility for the communities surrounding the vineyard.
organic and biodynamic grape growing methods prohibit the use of chemicals, these forms of producing grapes just aren’t an option cool or humid climates, vineyards that cannot or don’t want to be organic or biodynamic can still care for and take care of the environment. Sustainable wines are not necessarily natural wines, they are not organic or biodynamic, although they can be all of these.
We have non cultivated vineyard boundaries which are not only aesthetically pleasing but this helps to protect and encourage the wildlife habitats within those areas and the hedgerows. Biodiversity within the local environment is extremely important which enhances the natural ecosystems and provides habitat for a wide variety of animals and plants which in turn assists with the management of pests and diseases within the proximity of the vineyard. Our program for disease management is vitally important for the well-being of our vines and this is delivered through very careful vine monitoring throughout the growing season so that the control of disease can be planned effectively with low impact on the vineyard and the surrounding environment.
Sustainable working practices within all departments are encouraged at Lympstone Manor and the team is tasked with thinking responsibly and take ownership in order to reduce wastage where possible and therefore cost in order to achieve a more positive environmental result. Lyme Bay Winery who produce the wines for Lympstone Manor Estate are one of the very few English wineries to have achieved accreditation for manufacturing quality from the British Retail Consortium ensuring that all our wines are crafted to the highest possible standards
