Lympstone Manor Estate vineyard was planted in April 2018 with some 17,500 Pinot Noir, Meunier and Chardonnay vines on the sloping parkland extending almost to the foreshore of the Exe Estuary. The first release of wines was from the outstanding 2020 vintage that gave tiny quantity but astonishing, award-winning quality. Each vintage has subsequently been unique and there is now a full range to sample and enjoy:
Lympstone Manor Estate Classic Cuvée – our premium single-estate sparkling wine is a cuvée of Pinot Noir, Meunier and Chardonnay (the latter aged partially in new and used French oak barriques for 9 months prior to blending), with secondary fermentation in the bottle followed by ageing on the lees for no less than 36 months prior to dégorgement. This is a beautiful wine to enjoy as an apéritif and it is also rich in flavour and structure, to elegantly accompany a lighter first course and seafood dishes.
Lympstone Manor Estate Isabeau Rosé 2022 – first released in 2022 and named after Michael’s daughter Isabeau. It is produced from the ‘taille’ pressing at the winery and is a field blend of Pinot Noir, Chardonnay and Meunier grapes. Michael wanted a Provençal style rosé with bright fruit and crisp citrus notes which make it such an ideal wine to enjoy with food, most notably the fish and shellfish of Lyme Bay, landed almost on the doorstep of Lympstone Manor.
Lympstone Manor Estate Triassic Pinot Noir 2020 – we can only make red wines in exceptional years. This first vintage was produced from one of our three clones of Pinot Noir aged for 18 months in a mix of new (30%) and second- and third-year French oak barriques. The wine surprised the English wine world when it was awarded Best English Red Wine at the prestigious International Wine Challenge. The style is more Burgundian than New World and it pairs beautifully with more delicate meat and game dishes on the Lympstone Manor menu. Only very limited amounts of this award-winning wine are available for sale.
Lympstone Manor Estate Edwards Chardonnay 2022 – Only 549 bottles of this extraordinary barrel-fermented Chardonnay were produced. The wine is named after Steve Edwards, Michael’s longstanding Operations Director who has worked closely with Michael over the past three decades. In recent times, Steve has also taken on the duties of Lympstone Manor Estate Vineyard Manager, and spends much of his time in the vineyard. This is a beautiful and rare wine that must be tasted, to be believed. However, it is available only in such tiny quantity that the only place to sample it is at Lympstone Manor itself.
The range of Lympstone Manor Estate Wines is further complemented by two products that make use of the grape pomace leftover after the winemaking process and are perfect Christmas wine gifts;
Lympstone Manor Estate “Spirit of Lympstone Manor” eau de vie de marc – the grape pomace (or marc in French) from the pressings of our Pinot Noir, Meunier and Chardonnay grapes are carefully double-distilled by Master Distiller Leigh Kearle in small-batch artisan pot stills to result in this exceptional after-dinner digestif which is extraordinarily aromatic and smooth at the finish.
Lympstone Manor Estate “Essence of Lympstone Manor” gin – to produce this premium gin, Master Distiller Leigh Kearle takes the “Spirit of Lympstone Manor” eau de vie de marc as a base spirit and flavours it with a selection of botanicals including juniper, oris root, coriander, angelica root and lemon Verbena to make a classic style London Dry Gin with invigorating zesty citrus notes and a lovely, spicy intensity.
