Welcome to Lympstone Manor Estate, the home of Lympstone Manor wine. We are the only Michelin-star Hotel-Restaurant with its own vineyard producing award-winning wines. The very best place to discover and enjoy our wines is here at Lympstone Manor, perhaps served with canapés overlooking the vineyard, the Exe Estuary, and out beyond to Lyme Bay and the English Channel. We also have a limited amount of wine available for sale from our Wine Shop and this can be delivered direct for you to enjoy in the comfort of your home.

Lympstone Manor Estate Classic Cuvée

Our flagship wine. When Michael first envisaged cultivating a vineyard at Lympstone Manor, he wanted to produce a single-estate Devon sparkling wine of the highest quality, a wine that is beautiful to enjoy as an aperitf yet with enough structure to accompany his finely considered cuisine. The result is Lympstone Manor Classic Cuvée, a blend of Pinot Noir, Meunier, and Chardonnay (the latter predominantly aged in new and used French oak barriques for 9 months prior to blending), with secondary fermentation in the bottle and aged for no less than 3 years on the lees before dégorgement.

Lympstone Manor Estate Rosé

The first release of a still Rose wine from our estate in 2022, aptly named “Isabeau” after Michael’s daughter. The Lympstone Manor Estate 2022 Isabeau Rosé is produced from the “taille” pressing at the winery and is a field blend of the Pinot Noir, Chardonnay and Meunier grapes, it is very much in the classic Provencal style with bright fruit and citrus notes underpinned by fine minerality and balanced by mouthwatering acidity.

Lympstone Manor Estate edwards chardonnay 2022

LIMITED EDITION /549 BOTTLES

The launch of the 2022 Chardonnay marks the first white wine to be produced from the hotel’s own vineyard. Produced in partnership with Devon’s Lyme Bay Winery, the barrel aged wine is produced from Chardonnay grapes that have been fermented in old French oak barrels delivering a wine with subtle notes of almond, toasted oak, and some spice.
