The very best place to discover and enjoy our wines is here at Lympstone Manor, perhaps served with canapés overlooking the vineyard, the Exe Estuary, and out beyond to Lyme Bay and the English Channel. We also have a limited amount of wine available for sale from our Wine Shop and this can be delivered direct for you to enjoy in the comfort of your home.

Lympstone Manor Estate Classic Cuvée NV
Our flagship wine. When Michael first envisaged cultivating a vineyard at Lympstone Manor, he wanted to produce a single-estate Devon sparkling wine of the highest quality, a wine that is beautiful to enjoy as an aperitf yet with enough structure to accompany his finely considered cuisine. The second release of Lympstone Manor Classic Cuvee, which is a blend of Pinot Noir, Meunier, and Chardonnay from the 2021 harvest, and the 2020 reserve wines aged in old French oak. The resulting wine is richly layered, showcasing primary fruits of red apples and quince amidst secondary flavours such as a rich toasted brioche, minerality and vanilla. This elegant wine has a creamy mousse and a balanced structure with a long and complex finish, with secondary fermentation in the bottle and aged for no less than 3 years on the lees before dégorgement.

Lympstone Manor Estate Triassic Pinot Noir 2020
Overt black summer berries intermingle with subtle toast from the French oak, supported by delicate hints of sappy stems. The palate is balanced and juicy, displaying great poise and delivering a beautiful and long finish.

Lympstone Manor Estate Isabeau Rosé nv
The first release of a still Rosé wine from our estate in 2022, aptly named “Isabeau” after Michael’s daughter. The second release of the Isabeau Rosé is a vibrant wine is a subtle blend of the 2023 and 2024 vintages. With hints of summer berries leading into fresh citrus tones, it has soft fruit and some minerality, balanced with crisp acidity and just a hint of citrus on the finish. This multi vintage Rosé is produced using some of the finest fruit from the vineyard, extracting the full potential from the Pinot Noir, Chardonnay and Meunier grapes.

Lympstone Manor Estate edwards chardonnay 2022
LIMITED EDITION /549 BOTTLES
The launch of the 2022 Chardonnay marks the first white wine to be produced from the hotel’s own vineyard. Produced in partnership with Devon’s Lyme Bay Winery, the barrel aged wine is produced from Chardonnay grapes that have been fermented in old French oak barrels delivering a wine with subtle notes of almond, toasted oak, and some spice.
